Tomato Florentine Soup from The Official Disney Parks Cookbook

This Tomato Florentine Soup was the right thing for a chilly midwest evening. I like how the recipe called for ground turkey instead of ground beef, giving the dish lightness. Of course, you can always use ground beef if you don’t care for turkey.

This recipe comes from The Official Disney Parks Cookbook. According to the book, this is a family favorite from Boma- Flavors of Africa at Disney’s Animal Kingdom Lodge.

Tomato Florentine Soup

Ingredients
  

  • 2 tablespoon olive oil
  • 1 pound ground turkey breast
  • 1 teaspoon seasoning salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 1 tablespoon minced garlic
  • 32 ounces chicken stock
  • 28 ounces tomato sauce
  • 2 cups finely diced fresh tomatoes
  • 1 teaspoon Worcestershire sauce
  • 1 dried bay leaf
  • 1/2 teaspoon dried oregano
  • 1 cup cooked elbow macaroni noodles
  • 2 6-ounce bags baby spinach

Instructions
 

  • Heat oil in large saucepan over medium heat. Add turkey, seasoning salt, and pepper. Crumble turkey while cooking until golden brown. About 5 minutes. Add carrots, celery, onions and garlic. Cook until onions are translucent. About 3 minutes.
  • Stir chicken stock, tomato sauce, diced tomatoes, Worcestershire, bay leaf and oregano into pot. Simmer covered. About 30 minutes.
  • Add noodles and spinach. Allow time for spinach to wilt before serving.
